Baked Ziti

This classic Italian dish is always a good go-to idea for an easy dinner that'll make everyone happy.  Make on a weekend and have great leftovers for a quick lunch during the week, amke for a pot-luck at the office or even prepare it when the relatives come over to stay on the weekend.  Either way, it will satisfy everyone's tastebuds.  Pair this with a garden salad and some garlic bread for an all-around meal that the whole family will enjoy.  

For this recipe, we used spicy plant-based sausage links though regular and Italian-style plat-based sausage links are also an option. 
To Make:
     - Start by preheating oven to 425 degrees. Bake sausage links for 22 – 25 minutes or until brown and sizzling.
     - While links are cooking, fill a large pot with water and begin boiling ziti noodles.
     - Meantime, in another skillet, throw in the spinach and 1-2 T. of oil. Slice up mushrooms and add to pan.
     - Once sausages are done, remove from oven and let cool for a moment.
     - Once noodles are done cooking (approx. 12 minutes), drain noodles then place back in pot. Take the spinach and mushrooms, add to pot with the noodles. Add in diced tomatoes and jar of pasta sauce. Stir until thoroughly mixed.
     - Slice up spicy sausages into ½ inch pieces then add to pot. Sitr one final time to mix then place in 9x13 baking dish. Sprinkle with parmesan or mozzarella cheese and bake for an additional 20 minutes

- Remove from oven and let cool for 5-8 minutes before serving
