Breakfast Scramble
This is a breakfast for the long weekend, when it's cold and snowy, and you don't have to go out to run errands. Everyone loves a good breakfast scramble with lots of good sausage, eggs and veggies. This scramble is just as filling with splant-based sausage, plant-based egg, potatoes and veggies. I sometimes make a full portion of this and save leftovers for an easy weekday meal prep when things are hectic, and you need a grab-and-go breakfast. If this breakfast doesn't fill you up then nothing will.
- Spicy Plant-based Sausage
- Red Potatoes
- Sliced Mushrooms
- Red Pepper
- Fresh or Frozen Spinach
- Plant-based Egg
- Salt & Pepper
- Vegetable Oil
- Plant-based Cheese Shreds
Begin by washing, peeling, and shredding the potatoes. If crispier potatoes are desired, place shredded potatoes in a kitchen towel or cloth and twist until all the excess liquid has been drained. Place the potatoes into a large skillet, heated with oil.
While the potatoes are cooking, chop up the red pepper and the spinach and mushrooms. Add all the copped veggies to the skillet and continue cooking.
In a separate pan, cook the sausage until brown. Add to the veggies in the larger skillet continuing to stir and cook the contents. After the sausage has been transferred, use that smaller pan take the Just Egg and scramble it. Once everything is scrambled, add to the larger skillet as well.
Serve with or without plant-based cheese on top or side of avocado, or your favorite toast or English muffin.
