Chorizo & Eggs

Growing up, chorizo was never something that was talked about in my home but trying as an adult was a delightful experience.  Heck, I'm not even sure that my parents have ever tried, let alone heard of chorizo before.  Finding 'soy'-rizo in our local grocery store was very exciting, especially after becoming plant-based.  When you give up meat, you realize there are some things that you will never have again.  We thought chorizo was one of those but we were wrong.  This breakfast is inspired by the simple chorizo and eggs breakfast dish. 
Start by making the potatoes. Wash, peel, and cube the potatoes. Mix with the paprika, onion powder, garlic powder and pinch of salt. In a preheated over, bake the potatoes at 425 degrees for 35 – 40 minutes, stirring halfway through.

While potatoes are cooking, heat some cooking spray in a medium sized pan. Slice the sausages into pieces, or mash and crumble them; your choice. Cook for about 10 minutes or until brown on the sides.

In a third pan, spray some more cooking spray and heat. Add a large amount of Just Egg and heat until the Just Egg begins to scramble. Once the potatoes are done, scoop generous portions of potatoes, Just Egg and sausage on to each plate. Serve with a side of fruit, English muffin or biscuits.
