Meatloaf

What better comfort food is there than a hearty meatloaf with some crisp green beans or broccoli and smooth, velvety mashed potatoes?  Now, some naysayer would point out that this really isn't meatloaf since there's no actual 'meat' in it but for those of us who are plant-based out there, I don't think that little technicality is something that will stop us from enjoying a hearty, filling dinner.  This recipe is of my own creation and something I like to make on the weekend, so I can enjoy an easy leftover during the busy, busy week.
Start by finely dicing the white onion and the carrots, or place in a food processor for a few pulses. Mix the onion and carrots with a package of meat, can of lentils, bread crumbs

Add the Just Egg and seasoning. Mix with your hand until thoroughly blended.

 Place in to a greased bread pan and bake at 375 degrees for 45 minutes. Serve a generous slice warm with some mashed potatoes and green beans or asparagus.
