BBQ Soy Curl Sandwich
With just a little bit of prep time this sandwich comes together super quick . Going plant-based opened my eyes to a variety of new items that I'd never heard of before including the best shelf staple - soy curls. They are soy protein curls, dehydrated and bagged for later use. I have found that keeping a bag or two on hand is really a good idea. They are incredibly high in protein and fiber, and reletively inexpensive. Whenever I feel like having a simple BBQ sandwich, I pull these out. I've used soy curls in stir fry and on top of a baked potato but this is my simple go-to for a quick lunch. It's always ready and fills you up right.
- Soy Curls
- Barbeque Sauce
- Hamburger Buns
- Fresh Lettuce Greens
The first step is to grab a medium to large-sized bowl and submerge all the soy curls in water to rehydrate them. This will take anywhere from 30 - 40 minutes for full rehydration. Once they are rehydrated, drain the water and squeeze excess water from the curls.
Put the curls in a medium-sized pot and add your barbeque sauce to the curls. 3 - 4 Tablespoons is good but you can add more if you want them saucier. Cook the curls on low heat for 45 - 60 minutes so the sauce can absorb into the curls.
Place a large spoonful of cooked curls on to a hamburger bun with some gresh greens. If you want extra sauce then feel free to add more. Best served with waffle or steak fries.
