Chicken, Egg & Gravy Breakfast Sandwich

This recipe was inspired by, and almost basically copied from one of our favorite breakfasts from before, when we used to eat meat.  We had a restaraunt that we loved to go to that served a breakfast dish similar to this.  It was stick-to-your-ribs good.  We decided to replicate this dish using plant-based ingredients and thought that we'd share.  This one is certainly still time consuming but if you are planning a breakfast brunch for two then this would be a dish to serve.  If you can finsih it all at least.  
Start by pre-heating the oven to the temperature on the bag for the Gardein chicken patties. Once heated, spray a baking sheet lightly with cooking spray and begin cooking the patties. While the patties are cooking, take a medium sized pan and begin making the country gravy. Add a pinch of salt and pepper while cooking.

Once the patties are done cooking, remove from pan and set aside. Next, take the biscuit dough and adjust the temperature of the over accordingly, bake for the length of time stated on the back of the package. Continuously stir the gravy while the rest of the ingredients are still being prepared.

Once the biscuits are done, set aside as well. Use a spatula to loosen them from the bottom of the baking sheet.

Heat two small skillets and cook the Just Egg. As the Just Egg firms up, use your spatula to flip the edges over forming a rectangle or square. While the Just Egg is cooking, start cutting open the biscuits to make the sandwiches.

 Place a cooked piece of Just Egg, chicken patty and a slice of cheese on each biscuit. Top each sandwich with a couple of ladles of gravy. Serve warm with some fresh fruit.
