French Toast

French Toast was always one of my favorite breakfasts as a child.  My mom didn't make it often but when she did, I ate as many slices as I could.  It surpises me since I didn't eat a lot of French Toast as an adult until becoming plant-based.  Now, this is one of my favorite recipes for when it's a special occassion or a holiday.  I love the addition of the stawberries to my French toast as it gives the plate some vibrant color and some freshness to the dish.  Add some sausage links or patties to the side for some swavoriness.  This recipe is taken from the Just Egg website.    https://www.ju.st/cook/french-toast 
Start by drying the bread. You may leave it out overnight in a tray or use the shorter method of heating the bread in the oven for 20 minutes at 300 degrees, flipping half way through.  You may also leave the bread out on a baking sheet overnight if you don't wish to use the oven to dry out your bread.

Whisk together the Just Egg, sugar, cinnamon, vanilla and milk in a medium sized bowl. Once the custard is thoroughly mixed, pour over the bread and allow it to soak for 30 minutes, flipping half way through.

After the 30 minutes is up, heat a flat skillet and cook each slice until brown and crispy on each side.

Serve warm with some plant-based butter, syrup or fresh fruit.
